One of the items on our fall bucket list was to “boo” some of our friends. Have you ever been “boo”ed? It was so much more fun than I thought it would be! And since “boo”ing our friends was on our list, we needed some very yummy homemade treats to pass along. And I wanted it to be so simple that the girls could do every part of the recipe. So we modified a basic cake mix recipe a tiny bit to make Pumpkin Cinnamon Chip cookies. They are so simple and are actually yummy!
Here’s the very simple and basic recipe:
Ingredients
1 box yellow cake mix (you could also use a spice cake mix)
1 can pumpkin puree
1 cup cinnamon chips
I have seen recipes on Pinterest for a similar recipe, but using chocolate chips instead. I am not a fan of pumpkin and chocolate flavors (at least together), but I do love cinnamon and pumpkin and I had some cinnamon chips on hand from making a batch of our Cinnamon Chip Scones (seriously, yum!). So I just poured a bunch of cinnamon chips in the batter to make the batter better.
Preparation
1. Preheat oven to 350 F.
2. In a large bowl mix together cake mix and pumpkin puree until well combined (all ingredients moist).
3. Fold in cinnamon chips.
4. Use a cookie scoop to measure out cookies onto a parchment lined baking pan (we used Silpat). Bake for 13 minutes.
These cookies are super soft and delicate. But they are also super yummy! Our cookies almost didn’t make it into the “boo” bags we created for our friends.
