Strawberry Banana Bundt Cake

I made a Strawberry Banana Bundt cake last summer on the spur of the moment because I needed to make snacks for our church meeting.  I thought, “Hey, a strawberry cake mix could be considered healthier if I add some banana to it, right?”  All nutritional guessing aside, the cake turned out beautifully and was incredibly popular at church – it was gone FAST!  And I have been planning on making it again with G for quite some time, so this week was the week to give it a go.  This is the perfect cake to make with little bakers because it requires some different fine motor skills and is truly yummy!  We had G’s grandma and papa over and our project quickly turned into G’s cooking show, since Grandma video taped the whole thing for posterity!  Since the cake goes together so quickly, we didn’t get  a lot of pictures of the process, but believe me she had a great time!

Here are some suggestions for making preparing any cake with little ones:

Let them do as much as they are able in the process.  G is learning to use scissors, so we let her cut the bag for the cake mix open.  We let her pour all the ingredients in the bowl and give mashing the bananas a shot.  She also mixed all the ingredients and gave folding in a shot.

Put things as low as you can.   We did all the preparations for our cake in G’s kitchen on her kitchen table (a low IKEA kids table).  Having everything at her level helps her to get leverage to work on the cake easier.

Don’t forget to have fun – lick the bowl and laugh your way through the process.  Baking should be fun!

Strawberry Banana Bundt Cake

1 box strawberry cake mix

1/2 pkg. cook and serve pudding mix (about 1/4 cup)

2 ripe bananas

3 eggs

1 cup water

1/3 cup oil

 

1.  Pre-heat oven to 350 F.

2.  Pour cake mix into a mixing bowl.  Add all ingredients except bananas and mix until well combined.

3.  Mash bananas in a separate container.  Fold the mashed bananas into the cake mixture.

4.  Pour cake mix into a greased bundt pan.

5.  Bake 350 40 minutes. cool on wire rack.  You will want to store it in the refrigerator when completely cooled.

Banana Glaze (optional)

1/ 2 c. powdered sugar

1/ 2 tsp. banana extract

1 tbsp.  half and half

Mix all ingredients together in a small bowl.  Adjust ratios according to desired thickness, adding a little bit more half and half, if necessary.

Pour glaze over cooled cake.

      My other little one won’t do it either. She either looks at me like I am crazy or runs away, screaming! Funny!

  2. Looks yummy and your little helper is adorable! I think it’s so important for kids to learn how to cook! It’s a such a great life skill to have. My oldest needs to expand his skills, and he is off to college in a year. My two younger ones are pretty self sufficient in the kitchen though. 🙂

      Thanks, Michelle! I think it is important, too; but I really love the look in my girls’ eyes when they accomplish something (anywhere, but the kitchen is FUN and tasty)!
